Abstract

In the context of the COVID-19, the Human Right to Adequate Food (HRFA) was affected in vulnerable population groups as a result of the loss of income sources and variations in the purchasing powers, affecting the quality and quantity of food for consumption. This paper pretends to show how the integrality of university functions contributes to the community processes associated with the DHAA and seeks to analyze the significant contributions to the teaching and training of students of the degree in Nutrition, in the field of population nutrition. Integral work devices are developed, starting with a University extension process in the context of a public policy, introducing an interdisciplinary elective course and, finally, the process of internships for undergraduate nutrition students is presented. Given the specific characteristics of each device, diverse learning related to the dialogue of knowledge and feedback between theory and practice were developed. Through teaching and student resources, we contributed to boost collective processes and actions, which in the context of crisis searched for alternatives with an interdisciplinary, interinstitutional, intersectoral and intersocial approach to social problems in order to guarantee the HRFA from a food sovereignty perspective.
